Wicked Tarts - Elphaba & Glinda
In celebration of the upcoming release of the Wicked movie adaptation, I made 2 tarts inspired by the main leads.
My Elphaba tart is a two-toned matcha cheesecake tart in a chocolate pâte sucrée shell, decorated with black tea milk chocolate ganache & pistachios.
My Glinda tart is a pink praline tart (made with pink pralines I brought back from France!) in a classic pâte sucrée shell, decorated with white chocolate ganache and white pearl sprinkles.
I’ve got high hopes for this movie and can’t wait to blast the soundtrack in my car on repeat for the next 5 years!

Adapted with inclusion of matcha powder
Pro Tip: Whisk the matcha powder in with the sugar first to fully declump the matcha and then whisk in with cream cheese. This will avoid any matcha speckles in your cheesecake.
Topped with black tea ganache and toasted pistachios
Black tea ganache made by infusing 1-2 tea bags in hot heavy cream for 10-15min and then pouring that over chopped chocolate and mixing into a smooth ganache

Pink Praline Filling - 370g of heavy cream combined with 370g of pink pralines

Pro Tip: Crush the pink pralines with the bottom of a rolling pin before transferring to a food processor. This will make it easier to break down and also avoid damaging your food processor blades.
Topped with melted white chocolate drizzle and sugar pearl sprinkles

The inspiration came from these movie posters with the 2 characters. For Glinda’s tart, I wanted to capture the swirls & sparkliness of Glinda’s dress. For Elphaba’s tart, I’m incorporating the woven broom handle as well as the wavy texture of Elphaba’s dress.
Then once the designs had been created I started brainstorming the flavours and components. I generally avoid making desserts with a lot of food colouring if I can avoid it so I wanted to go with ingredients that would get me these vibrant green & pink colours naturally. That led me to deciding on a matcha cheesecake tart (something rich, earthy and complex) and a pink praline tart (something fancy, elegant and sweet).
