Triple Birthday Cocktail Desserts

We had a little triple birthday celebration with myself and 2 of my best friends. Our hangouts often involve delicious cocktails and catching up on life so I wanted to make some cocktail-inspired desserts.

• Champagne cake - layers of champagne cake, mascarpone whipped cream, fresh strawberries and topped with a sugar tuile to represent the champagne bubbles.

• Espresso martini mousse - chocolate coffee mousse topped with mascarpone whipped cream and chocolate “coffee beans”

• Bellini panna cotta - layers of peach-raspberry panna cotta and peach panna cotta, topped with fresh raspberries
